Vanilla Chai Sheet Cake with Cream Cheese Icing

I’ve seen tons of recipes for sheet pan cakes around the internet and on Pinterest and they’ve always sparked my curiosity. I’m always looking for a way to bake my cakes, cookies, brownies, etc. quicker because who has the patience to wait for something to bake for an hour and cool for even longer? Not this girl.

So, when I had gotten tired of the typical fall flavors of apple and pumpkin, I decided a little out of the box thinking was in order. I wanted a cake that would be moist, sweet, and spicy (not in a burn your tongue kind of way but in an interesting to your palate kind of way). This cake is all that and more.

It’s got warm flavors from the handmade chai spice blend of cinnamon, cardamom, ginger, and cloves and when you add in the vanilla bean seeds this cake is actually perfection. Because my family of three would never eat all that cake before it went bad, I send it to work with the hubs.

(Also this is how I can get some more unbiased opinions about whether a recipe I’ve created is actually good or not). All his co-workers gobbled this cake down and I got back a nearly empty pan at the end of the day. I’d say that was a good sign that this cake is seriously delish.

The frosting on top is cream cheese based and comes together in a snap with just four ingredients. It’s tangy and lightly sweet and the perfect topping to such a flavorful cake. You’ll want to make the chai spice blend ahead of time (recipe below) so that’s ready to go once you get the cake all mixed.

Vanilla Chai Sheet Cake with Cream Cheese Icing

This sweetly spiced cake has notes of cinnamon, cardamom, ginger, vanilla bean, and clove to warm you up this fall season.

Chai Spice Blend Ingredients:
  • 1 tbsp cinnamon, ground
  • 1 tbsp cardamom, ground
  • 3/4 tsp cloves, ground
  • 1 1/2 tsp ginger, ground

Cake Ingredients:
  • 1/2 c butter, softened
  • 1 c brown sugar
  • 2 eggs
  • 1/2 c AP flour
  • 2 tsp baking powder
  • 1/2 c buttermilk
  • 1 tbsp vanilla extract
  • 1 tbsp chai spice mix

Frosting Ingredients:
  • 8 oz cream cheese, softened
  • 4 c powdered sugar
  • 1 tbsp vanilla
  • 1 tbsp milk

  1. Mix the chai spices together. Set aside.
  2. Take a 10 x 13" sheet pan and line it with parchment paper. Spray with nonstick spray. Set aside. Preheat oven to 350 degrees F.
  3. Cream butter and sugar on medium speed in your mixer or with a hand mixer for 3 minutes. Beat eggs and then pour into butter and sugar mixture. Let mix 30 seconds or until combined.
  4. Add flour, baking powder, buttermilk, vanilla, and chai spice blend. Mix well.
  5. Pour into prepared sheet pan. Bake for 20-25 minutes.
  6. While cake is baking, prepare frosting.
  7. Combine cream cheese and powdered sugar and beat until combined. Add vanilla and milk. If you prefer a thinner consistency, add more milk 1 tsp at a time until desired consistency is reached.
  8. Once cake is cooled, spread frosting onto cake.
