Vanilla Porter Thumbprint Cookies with Chocolate Ganache

The hubs works in retail, which means he has super random days off. On one of these days, we decided to head to the grocery story to grab some beer for a day of beers and video games to blow off steam.

While we were there (since I don’t drink), I decided to look at all of the different craft beers. I’m not a big drinker (understatement of the year) tbh. I just don’t get the appeal of feeling dizzy and sick, it’s just not fun to me. BUT I do love flavor combinations. If I DO drink beers, you’ll catch me sipping on something dark, so that’s where I usually look to see what interesting craft brews there are.

While strolling along the aisle (and freezing my ass off…), I came across a beer that looked SO good it made me want to eat it. When I saw it, I instantly thought about how I could use it in food (because I knew I just wasn’t going to drink it). It’s this vanilla porter beer from Breckenridge Brewing.

It has vanilla beans and caramel flavors in a rich, dark beer. I felt like it could go amazingly in a cookie of some sort, but what kind? There’s so many good options (I bet this would be an amazing addition to a chocolate chip cookie). The vanilla and caramel notes make it a really great combination with chocolate and brown sugar so that’s what I based these cookies around: The flavors of vanilla beans, caramel (brown sugar), and chocolate.

The hubs took these into work and his co-workers ate them all up so I know they were a hit! If you can’t find this specific beer, there are lots of vanilla flavored dark beers on the market, just sub in your favorite craft beer for the same result.

Vanilla Porter Thumbprint Cookies with Chocolate Ganache

With notes of vanilla and caramel, a dark craft vanilla porter beer elevates these cookies to something truly special. Topping these cookies off with a smooth, velvety chocolate ganache creates a truly unique dessert.

Cookie Ingredients:
  • 1 ½ c butter, soft
  • 1 ¼ c brown sugar
  • ½ tsp salt
  • 4 ½ c AP flour
  • ½ c vanilla porter beer
  • 1 vanilla bean pod, seeded
  • 1 tbsp vanilla extract

Ganache Ingredients:
  • ½ c heavy cream
  • 1 c semi sweet chocolate chips (if you like your treats really sweet, use milk chocolate chips)

  1. Preheat the oven to 350 F. Spray sheet pan with nonstick spray or line with parchment paper/silicone baking mat. Set aside.
  2. In a large bowl, combine butter and sugar and cream together with mixer for 3-5 minutes.
  3. Add salt. Alternate adding flour with porter beer until both are fully combined.
  4. Add vanilla extract and vanilla seeds.
  5. Roll dough into 1.5”-2” balls. Press thumb into center gently creating a pocket for the ganache. Refrigerate 20 minutes.
  6. Remove dough from refrigerator and bake 15 minutes. Allow to cool completely.
  7. Prepare ganache: In a microwave safe bowl, combine cream and chocolate. Microwave in 30 second increments, stirring after each 30 seconds until chocolate begins to melt and combine with the cream. Do not overheat.
  8. Fill each cookie “thumbprint” with ganache and allow to cool and set.
