Cornmeal Jalapeno Waffles

I don’t know about you, but I’m always searching for new breakfast ideas. I tend to eat the same thing for breakfast week in and week out and I get burned out a lot on the same old stuff. At the same time, my body is picky AF about what I put in it so that limits the stuff I can eat, first thing in the morning especially.

Let’s see - very little sugar, very little fat, nothing with peanuts. Pretty sure that covers it but man does that limit things quite a bit.

SO when I heard about savory waffles, I had to try and figure out a recipe because that sounded like a match made in heaven for me. I am slightly obsessed with jalapenos, so I thought that would be a great place to start. I had some cornmeal hanging out in my pantry (because at some point I thought I’d give homemade cornbread and homemade corn tortillas a go but never got around to it, at least not yet) so that made the decision as to what to use as a base for my jalapeno waffles easy.

These waffles are SO easy and come together in a snap using stuff you probably already have laying around your kitchen.

One little note, though: These waffles are dry AF so they NEED a sauce. Some sort of syrup or serve them over a bowl of chili (oooooh). On their own, you’ll need a very large drink if you want to eat them plain (which you can, I did. The flavor is out of this world!).

Now that we’ve covered that, let’s get makin:

These could not be more simple. Here’s what you do: Chop the jalapenos. Throw everything in a bowl. Stir. Cook on your waffle maker. Done. Haha.

I didn’t take progress pictures because tbh, there just wasn’t much progress to document. These aren’t any more difficult than using Bisquick. Let me know what you decide to top yours with!

Cornmeal Jalapeno Waffles

A savory breakfast option with a little sweet heat, these cornmeal jalapeno waffles make a simple addition to your morning routine.

Makes: 6 large waffles

Cook time:

Ingredients:
  • 1 c AP flour
  • 1 c cornmeal
  • 4 tsp baking powder
  • 1/4 c sugar
  • 1 tsp salt
  • 1 lg jalapeno, seeded and chopped
  • 1 c milk
  • 1/4 c oil (I used avocado but any will work)
  • 2 eggs

Instructions:
  1. Mix all ingredients until combined.
  2. Drop 1/3 c of batter into your waffle maker and cook per your machine's settings. Makes 6 large waffles.
