Chai Vanilla Bean Apple Butter

Two things that are fall essentials in my mind: Chai tea and apples. And a year-round staple in my house is vanilla bean. I mean, is there anything more delicious than vanilla? I dare you to find a better flavor.

Anywho, the other day I was dreaming about apples and all the delicious things I was going to cook up this year with the ripe apples ready for picking all over this area and sipping some chai tea when it hit me: Why not combine the two?!

I know, I’m a genius.

So, this recipe is the love child of all things fall. Apples, warm vanilla bean, and the comforting spices that make up chai. I actually burned my tongue eating this apple butter straight out of the pan, but it was totally #worthit.

What’s your favorite food to eat apple butter on? So far mine is waffles or English muffins, though I’m going to try it in a bowl of oatmeal the next time I have enough space in my stomach to shovel in more food, so I’ll let you know if that makes the list.

Oooh, or you could dip vanilla wafers in it, or spread it on toast, or a cracker with some cream cheese, or a bagel…

A couple of notes:

  1. Use a sweet apple. I used Honeycrisp because they’re magical AF. I mean, for an apple that is.

  2. Make sure you cool the apples to room temperature before you blend them.

  3. Be sure to cook puree for AT LEAST 2-3 hours. You want it reduced quite a bit and a jam-like consistency. No one likes watery apple butter, Janet.

  4. Store it in the fridge.

Chai Vanilla Bean Apple Butter

A jam-like apple butter made with vanilla bean and a warmly spiced chai tea.

Makes: 1 cup

Prep time:

Cook time:

Ingredients:
  • 2 lbs sweet apples (such as Honeycrisp) (about 4 large apples), peeled, cored, and roughly chopped.
  • 1 c water
  • 2 bags of chai tea
  • 1/4 c honey, more to taste
  • 1 vanilla bean, seeds scraped, pod reserved
  • 1/4 tsp cinnamon
  • Juice from 1 lemon

Instructions:
  1. Place apples, water, tea bags, and vanilla bean pod in a medium saucepan. Bring to a boil over high heat. Reduce heat and simmer until apples are soft, about 15 minutes.
  2. Cool apple mixture to room temperature. Remove tea bags and vanilla pods and discard.
  3. Puree apple mixture in a blender or food processor. Stir in honey, cinnamon, and vanilla bean seeds and return to saucepan.
  4. Bring to a simmer over low heat. Simmer for 2-3 hours or until mixture is a thick, jam-like consistency, stirring occasionally. Remove from heat and stir in lemon juice and cinnamon. Store in refrigerator.
